Pumpkin Bread

It’s no secret I’m a fan of pumpkin (as evidenced here, here, and here).  I tend to favor decadent, rich dishes using this ingredient, but this bread satisfies my sweet tooth without feeling heavy.  I abandoned the pepitas that the recipe originally called for, but stayed true to rest of it.  Use an electric mixer to get the perfect batter consistency, and butter the pan liberally.  This bread makes the perfect breakfast…and snack…and mid-afternoon pick-me-up.
