(Vegan) Chocolate Chip Cookies

Chocolate chip cookies, without a doubt, are one of the most comforting foods around.  On a jetlagged afternoon, I poked around the Internet to find a sweets recipe using ingredients I had on hand.  This fit the bill (I used honey and agave instead of sugar and pulsed Irish oatmeal in my food processor for oat flour), and they were so tasty that I forgot they were vegan and semi-healthy.  As did my husband and my doormen.  These cookies are so good, I whipped up another batch this week.  I recommend using a melon baller to scoop the perfect portion, as these cookies do spread while they bake.
