Secret Ingredient(s) Macaroni & Cheese

I eat this macaroni & cheese at least once a week. On rough weeks, at least twice.

This week – I’ve eaten it 4 times.

Because it’s that good. And also because it’s just been a week.



  • Cook the pasta in salted water.
  • Whisk together the recommended butter/oil, milk, and cheese packet until well mixed. Then whisk in dijon and cayenne.
  • Add goat cheese and stir until melted.
  • Stir in cooked pasta until well mixed. Add truffle salt, and serve.

    I saw this on your Instagram Stories. I just discovered Annie’s when looking for something to give my toddler. I had some extra protein for her – hemp seeds, ground flax – and sprinkle some more grated cheese so she understands that this is “cheese pasta.” For me, I’ve added more Parmesan cheese and an insane amount of black pepper. So good! This is also a go-to meal for me on weeknights, at least once a week.

      I love the idea of adding hemp and flax – genius! This is one of the few items we have a ‘subscribe and save’ order on Amazon, given how much of it we (Rho, my husband, my parents, and I) eat. 12 boxes a month – and worth it.

  • This sounds delicious. I went through a phase a few years back where I’d use truffle oil instead of butter to cook a grilled cheese and it was life changing. Definitely picking up some truffle salt so I can have your recipe tonight while I binge watch The Crown.

    I never thought of adding dijon mustard to this! Mac n’ Cheese is a staple in our family, so adding a new twist is always welcomed. I’ve added feta, bacon, even spinach and peas. My son loves it! Thank you for posting this.

      Bacon is always a fantastic addition! I’ve never tried feta or veggies, but definitely will the next time. Which will probably be…tomorrow?
